Why Little Joys Gummies Are Made With Pectin, Not Gelatin
Most gummies are built on two defaults: sugar for taste, and gelatin for texture. At Little Joys, we wanted to look hard at both before we made ours. On texture, we made a different call. We set our gummies with pectin, which comes from fruit, rather than gelatin, which comes from animals.
The reasoning was simple. We wanted a gummy that is vegetarian, so the whole family can share it. One that is soft and tender enough for a small child to actually chew and enjoy. And one built on an ingredient you already know, the same pectin that sets homemade jam, instead of something you have to look up. Everything below is just the longer version of that choice.

The two defaults, and why we passed on them
There is nothing sinister about sugar and gelatin. They are simply the easy answers to the two questions every gummy has to solve, and most of the category is built on them. They just were not the answers we wanted for a gummy a child might reach for every day.
Sugar is the usual route to taste. A gummy has to be enjoyable, or it does not get eaten, so the shortcut is to sweeten it heavily and move on. We took a different route and used chicory root, a fibre that comes from the chicory plant, so our gummies can taste good without leaning on sugar to do all the work.
Gelatin is the usual route to texture. It gives that springy, chewy bounce and helps a gummy hold its shape, and it is popular for good reason: it is inexpensive, easy to work with, and reliable. The one thing about it is where it comes from. Gelatin is made from animal sources, which means a gummy set with gelatin is not vegetarian. So we reached for pectin instead.
Let's Understand Why Pectin, in full
Pectin comes from fruit. It is the fibre found in apples and citrus, and it is the same thing that makes homemade jam set. That was the first reason: it is an ingredient you already know. If there is a jar of jam in your kitchen, pectin is in it. We would rather build a gummy around something familiar than something you have to look up.
Because it comes from plants, a pectin gummy is vegetarian. In a lot of Indian homes, that matters. It means an everyday gummy the whole family can share, without an animal-derived ingredient being one more thing to check on the back of the pack.
And then there is the bite. Pectin sets softer and more tender than gelatin, with less of that rubbery, overly chewy pull. For little ones, especially around four to six, a softer gummy is simply easier to chew and easier to enjoy. A gummy only works if it actually gets eaten, not negotiated over or left in the bowl.
We will be honest about the trade-off too. Pectin is fussier to work with than gelatin. It takes more care to get the set and the texture right. We thought that was a fair price to pay for a gummy that is plant-based, familiar, and gentle enough for a small child to love.
Soft enough for little ones to enjoy. Plant-based enough for you to approve.
